Haskap & Lemon Olive Oil Cake

A delicious and moist citrus and haskap berry cake that is the perfect summer evening dessert.


  • 1 cup olive oil  
  • 3 eggs
  • 1 cup granulated sugar
  • ½ cup honey 
  • 2 tsp vanilla
  • ¼ cup + 3 tbsp lemon juice
  • Zest of one large lemon 
  • 1 tsp salt 
  • Baking soda & baking powder
  • 2 cups whole wheat flour 
  • 1 cup whole milk, or dairy free beverage
  • 2 sachets of Haskalife pure haskap berry powder


  1. Set the oven to 350F
  2. In a large bowl, whisk the olive oil, eggs, sugar, and honey together.
  3. Add the vanilla, lemon zest and lemon juice. 
  4. In a separate bowl, combine the baking powder, baking soda, salt and flour. 
  5. Slowly add to the wet ingredients 
  6. Stir in the milk and haskap berry powder
  7. Place into a 9” baking dish and bake for 50 minutes, or until golden brown on the outside. 
  8. Enjoy!
